The cream-filed pastry, beloved flavour of young and old, is accompanied by a history that would be difficult to imagine that it begun from the old times... 

However.. "Plakoyntes" of the ancient Greeks constitute a precocious form of cream-filed pastry, since it was a good of pie with various fillings.  

The years pass and the cream-filed pastry remain popular in the City but also in Smyrni.  

Etymologikally, the cream-filed pastry is a corruption the Ottoman word "pogatsa" that means pie with filling from custard, flambed with faint sugar or pie with filling cheese.   

Housekeepers from the City and Smyrni make cream-filed pastry and little cream-filed pastrie with various fillings for the morning and the afternoon familys  snack and mainly the children before and afterwards the school. 

Simultaneously however, in order for them to have one off-hand home made treat they offer it with preserves together with coffee to the visitor.

The cream-filed pastry in Greece..  

The cream-filed pastry dominated in the Hellenic area afterwards the Asia Minor  destruction from Northern Greece to Epirus and from Peloponnese to Crete. Particularly however it was naturalised as made-in Serres, since in Northern Greece was accomodated big number of refugees from the Asia Minor.  

The cream-filed pastry does not fall short of popularity especially in Thessalonica, all these years. In 1917 is founded the Guild of cream-filled pastry of  Thessalonica and two years afterwards it assembles 51 members, number not at insignificant. 

Afterwards 1922, the distribution of cream-filed pastry in the hellenic area is accelerated and her art develops. Today, despite the big historical way, the cream-filed pastry continue being a daily desirable dish with devotional partisans and, as it appears, her future appears so much rich just like her flavour.
